This year is slipping by me. We’re so very close to spring and I can’t wait. I am a fan of winter (aren’t most knitters) but I am ready for green lawns, flowers, and a little more warmth. Not a lot, though. There is a reason I moved to New England from Virginia.
Our week is shaping up to be a busy one. We have houseguests for the next two weeks, in addition to the usual craziness. I definitely needed a menu plan and need to stick to it.
Monday – Pot Roast in the crockpot. I love my crockpot. I don’t use it during the summer but during the school year? It gets a workout.
Tuesday – French Bread Caprese Pizza ~ talk about a simple and delicious recipe. I can get this one the table in less than 10 minutes and, since both my husband and I are doing this new Weight Watchers Freestyle, it’s an easy 4 pts.
Wednesday – Crockpot Chicken Enchilada Soup (2 Freestyle Points)
Friday – Parmesan Garlic Spaghetti
Saturday – St. Patrick’s Day Party
